Yummy Pumpkin Soup

It was pouring rain when I decided I needed to think about dinner. Soup sounded good but I really didn’t want to go to the store. So I decided to survey what I had on hand.

Here’s what I pulled out

  • a can of pumpkin
  • a carton of chicken stock
  • an onion
  • 2 pears
  • golden raisins
  • apple cider
  • pumpkin pie spice
  • cumin
  • curry powder
  • soy milk

I sauteed the onions in olive oil, stirred in the pumpkin, peeled pears, and raisins. I started playing with the spices. After about 10 minutes on low heat the mixture went into my blender. I put it into a pot and thinned it with the chicken stock and a little apple cider. Later I added a little soy milk., turned the heat down and let it simmer for an hour. Easy and delicious.
